pancakes

I know it was pancake day yesterday but I was too busy making and eating them to write about them.
The recipe I use is one that my mum gave me many moons ago, don't know where she got it from, but most pancake recipes are the same. The only change I have made to it is I use melted butter or oil to cook my pancakes we had them cooked in lard when I was little!
I have added the method as with all mum's recipes you learn how to make things stood on a chair at the side of the cooker!















4oz plain flour
pinch of salt - I use good old cooking salt
2 eggs
½ pint milk
2 tbsp butter melted
plus extra for cooking or you can use oil
  1. Sieve the flour and salt together into a bowl.
  2. Make a well in the centre and break in the eggs.
  3. Slowly start to whisk together then add the milk, whisk until all the lumps have gone. Mix in 2tbsp of melted butter.
  4. You need to get your pan hot, I use a small non-stick frying pan, then turn the heat down a bit. Put a very small amount of melted butter or oil in the pan and add a small amount of the batter, I have a small ladle that does the perfect amount - just under 3 tablespoons. Tip the pan around so that the batter evenly coats the bottom. It will only take a minute or so to cook, to check gently lift the edge - it should be nicely golden.
  5. At this point you need to turn it over, by either flipping it if you're daring or using a spatula or palette knife and cook the other side. Stack the made pancakes on a plate and keep them warm in a hot oven, or just eat them as they are made like we do.
  6. Serve with lots of caster sugar and either orange or lemon juice and enjoy!

long time no speak

Ok - I know, I know, big apologies are required for my long absence.

But I'm going to try harder now, start afresh and give this damn blog a topic and it's going to be food, original eh!
I do have a good excuse for choosing this and that is I actually trained as a chef/baker/cake maker extraordinare before getting sucked into the world of computers so you might say I'm going back to my roots.

What I intend to do is kind of make this a place for keeping track of my favourite sites that I visit for inspiration, recipes from other sites, books etc, and believe it or not my own creations.

Going to go now and reheat the lovely veggie soup that I made on Sunday (recipe to follow), adding some pasta to beef it up and then on to making pancakes for pud. These will be traditional thin ones with lots of orange juice/lemon juice and sugar, yum yum.
