The recipe I use is one that my mum gave me many moons ago, don't know where she got it from, but most pancake recipes are the same. The only change I have made to it is I use melted butter or oil to cook my pancakes we had them cooked in lard when I was little!
I have added the method as with all mum's recipes you learn how to make things stood on a chair at the side of the cooker!
4oz plain flour
pinch of salt - I use good old cooking salt
2 eggs
½ pint milk
2 tbsp butter melted
plus extra for cooking or you can use oil
- Sieve the flour and salt together into a bowl.
- Make a well in the centre and break in the eggs.
- Slowly start to whisk together then add the milk, whisk until all the lumps have gone. Mix in 2tbsp of melted butter.
- You need to get your pan hot, I use a small non-stick frying pan, then turn the heat down a bit. Put a very small amount of melted butter or oil in the pan and add a small amount of the batter, I have a small ladle that does the perfect amount - just under 3 tablespoons. Tip the pan around so that the batter evenly coats the bottom. It will only take a minute or so to cook, to check gently lift the edge - it should be nicely golden.
- At this point you need to turn it over, by either flipping it if you're daring or using a spatula or palette knife and cook the other side. Stack the made pancakes on a plate and keep them warm in a hot oven, or just eat them as they are made like we do.
- Serve with lots of caster sugar and either orange or lemon juice and enjoy!
